200 proof is 100% ethanol with no water content. 190 proof is 95% ethanol + 5% water. Both carry the same SDA 40B denaturant package, the difference is purely water content. Use 200 proof for fragrance, anhydrous cosmetic bases, and lab work where moisture matters. Use 190 proof for tinctures, some extractions, and applications where a small water fraction is acceptable or required.
