This chiller's outlet comes with a shut-off valve. What happens if I close that valve while the chiller is running? Is there an internal bypass that prevents damage to the pump in this case?

There is no internal bypass in the units , the valve should never be closed while the pump is running as it will cause internal damage to the pump
Damage caused by misuse of the pump will not be covered under warranty
